Since it’s only February, people are still going hard at maintaining their New Year’s resolutions of eating healthier and prioritizing fuel for their bodies. But at the Super Bowl, many over-processed, unhealthy foods are eaten and served to millions of people around the country. If you’re trying to have an enjoyable, yet guilt-free experience at the Super Bowl, here are three amazing, nutritious recipes to use!
High Protein Buffalo Chicken Dip
Ingredients:
- 16 oz. cottage cheese
- 2 cups of shredded chicken
- 4 triangles of Laughing Cow Creamy and Light cheese
- 1 cup of shredded mozzarella cheese
- ∼ ⅔ cup of favorite buffalo sauce (add or reduce to taste)
- ½ packet of ranch seasoning
To serve:
- Corn chips
- Vegetables of choice
Instructions:
- Using an immersion blender, your cottage cheese until smooth and creamy. If you don’t have an immersion blender, a regular countertop blender works too.
- In a bowl, mix chicken, cottage cheese, Laughing Cow cheese and buffalo sauce.
- Sprinkle in ranch seasoning to taste and fold in mozzarella cheese.
- Spread into an oven safe dish and top with more mozzarella.
- While the dip is baking, slice up vegetables of choice.
- Take dip out of the oven and serve warm or cold.
- Serve with chips or vegetables of choice and enjoy!
Brownie Ingredients:
- 1 ½ cups tahini, well-stirred
- ¾ cup pure maple syrup
- 3 large eggs
- 1 ½ tsp. vanilla extract
- ½ cup cocoa powder
- 2 tsp. baking powder
- ¼ tsp. kosher salt
Frosting Ingredients:
- greek yogurt
- powdered sugar
Instructions:
- Preheat the oven to 350 F & line a 13×8 inch baking pan with parchment paper.
- In a large bowl, combine tahini, maple syrup, eggs and vanilla – mix well.
- Add cocoa powder, baking powder and salt – mix well.
- Transfer batter to baking pan and bake for 24-26 minutes, or until a toothpick comes out clean. Move the brownies to a wire rack.
- While you let the brownies cool for 30 minutes, make your frosting – simply by mixing the greek yogurt and powdered sugar until you like the consistency.
- Once cooled, use a football shaped cookie cutter or knife to cut the brownies into footballs. Then add the frosting in a football-stripe design.
- Serve to your friends and enjoy!
Ingredients:
- English muffins
- Marinara sauce
- Shredded parmigiano reggiano
- Shredded mozzarella cheese
- Turkey pepperoni
- Optional:
- Chopped hot peppers
- Hot honey
Instructions:
- Take 10 English muffins and toast in the oven at 450° for 5 minutes.
- Mix marinara sauce and parmigiano reggiano.
- Spread sauce on each muffin and top with shredded mozzarella and pepperoni.
- Bake at 450° for another 6-8 minutes and broil for one to two minutes to make extra crispy.
- Serve & enjoy!
